2021 Discovery Rosé
Tasting notes
The Discovery Series Rosé has lush aromatics of peach tea, mango, and candied orange peel. These flavors follow onto the palate, but rather than a typical rosé experience, this wine plays with a bitterness that gives it a nuance seen in some cocktail bitters such as an Old Fashioned. A tea-like tannic structure leads to a gently lasting finish of tart strawberries and minerality. Ⓥ
Production notes
To give this Rosé its unique coloration and aromatics, the grapes were put through carbonic maceration for 3 days before going to press. Further fermentation and aging was done in egg shaped vessels.

In 2021, the blooming season started rainy for most of the Willamette Valley and Tualatin Hills. Fortunately, David Hill’s vines bloomed later, resulting in abundant yields at harvest time. The overall temperatures for the season were warm, but even with the heat spikes in the summer it did not affect the vines or spike the sugar content. In fact, the dry heat of the growing season allowed for intentional hanging times for many of our varietals. The conditions of this vintage has created wines with complex flavors and aromas, making 2021 one of our favorite vintages in the last few years.
